Download and try the skin attached to this post. The item spacing in the right column is increased in this skin so the items are farther apart. Download it to the Desktop and then copy it and paste it to C:\Program Files\Classic Shell\Skins.
Then open Classic Start Menu settings by right clicking the Start button -> Settings. Check the checkbox at the top "Show all settings" and switch to the Skin tab and pick the skin 'Windows 8 Skin with Wider Spacing'.
Next, you can go to the "Customize Start Menu" tab and hide/show any items you don't want.
To increase the size of the Start menu vertically, look for the setting "Minimum menu height" on the Main Menu tab of Settings.
You can also adjust the programs pane width setting.
