Apparently WindowBlinds overrides all Start Menu skin font information. This often leads to white-text-on-white-background issues. Is there a way Classic Shell could be set to "ignore" WindowBlinds? Or could such a feature be added? (Yes, I've tried adding an exception for ClassicStartMenu.exe and Explorer.exe and all that)

Adding Explorer to the exception list should be the way. If it doesn't work, then it must be a problem with WindowBlinds itself - it is disregarding its own settings :)
