When I copy files, if they're going to overwrite previous versions of the same files, I have to first click a checkbox and then the big "button" at the top of the popup. Used to be, I could just click "yes to all". Is there any way of getting that functionality?

No, sorry. The copy dialog replacement feature only works for Windows 7.

Is it possible we will see the classic copy dialogs in Windows 8.1 in any future updates?

No, it won't work. To get different dialogs you need to replace the entire copy engine. There are few copy replacements out there that you can install.

Wow, did Microsoft really change the copy engine that much? Well what would you recommend as far as a replacement for it?

Use PerigeeCopy as a replacement: http://jstanley.pingerthinger.com/pscopy

Here is a review I wrote of it: Queue copy and move operations in Windows with PerigeeCopy
